both successful, both restless, both
unsatisfied with what Georgian wine had
become. Surrounded by a country proud of
its 8000-year tradition, they couldn't help
but wonder: where is the excellence?
The elegance? The control? They weren't
winemakers.

Driving the vision behind the wines is the legendary Riccardo
Cotarella. We first came
across his name the way many do —
printed quietly on the back of bottles that somehow
always
stood apart. Long before NIMBI was even an idea, his approach
to winemaking
had already shaped our standards
We never imagined he'd one day be
part of this with us — walking our
soil, tasting
our fruit, challenging
every decision. What he brings is
more than knowledge. It's
insistence. And that has changed
everything.
I have followed the production of wine all over the world
with passion and love, but doing
it in the Mother Land of wine,
Georgia excites me and makes me proud. I thank Vakhtang
Otkhmezuri and Bacho Bugdiashvili, owners of the Nimbi winery
for having wanted me to lead this wonderful project.
This is our most accessible and inviting
wine. "Intento" suggests a clear
intention
or purpose — and "Delicato" brings
softness, approachability,
and grace.
